      7 years of maturation have certainly softened the tannins in this single variety cider but there remains a touch of soft, astringency in the mouth and a hint of leathery bitterness on the finish. Bone dry with a suggestion of rhubarb, sweated apples and smokiness. A cider that Albert, of Ross-on-Wye, was very excited by and something of a rarity so grab one while you can.
