      Major apples have a full flavour beloved of cider aficionados that encompasses sweetness tempered by a bitterness to stop your cider becoming cloying and sickly. In practice what this means is that the apples are low in acid and high in tannins. This blend of barrel aged vintages pours a hazy amber/marmalade with a gentle sparkle. The nose shows a bit of farmyard funkiness (I love the funk) and a deep aroma of aged apples. Nice tannins, soft acidity and a big hit of ripe/aged apples are all present on the palate. Love this stuff, it was the cider that made me 'get' dry cider. Dry and tannic but with boat loads of fruit to balance the whole thing out. Drink it with a huge chunk of traditional cloth bound cheddar for the ultimate farmhouse experience.
