    This cider is made by award winning cider maker Nigel Stewart from a blend of traditional, indigenous varietals and fermented with wild yeast followed by a minimum of 3 years maturation in barrels. It is a true expression of the traditional ciders of Somerset. It pours a beautiful amber into the glass with a slight haze and is completely still. On the nose there is obvious acidity but there is also a rich smokey/liquorice character which is very appealing. In the mouth it is off dry with a deep, aged apple character and very bold acidity. There are soft tannins which bring a slight astringency and hard tannins on the back end which bring leatheriness. There is also a hint of fresh apples and 'woodiness'. Not for those who are faint of heart, but for those who want to try something bold and proudly non-commercial this is one to go for. For the full Somerset experience have it with some traditional cloth-cound Cheddar (Pitchfork, Montgomery's or Westcombe).
